
Join water sommelier Cameron Smith for a fascinating 45-minute guided tasting that reveals the hidden world inside the planet’s most essential ingredient. In this one-of-a-kind experience, guests sample a curated selection of rare still and sparkling waters sourced from springs, glaciers, and aquifers around the globe, discovering how geology, age, and mineral content shape each water’s aroma, texture, and flavor.
Much like a wine tasting, Cameron will guide participants through the language of fine water—exploring concepts like minerality, total dissolved solids, and mouthfeel—while sharing stories behind remarkable sources, including iceberg water formed more than 15,000 years ago. Along the way, guests learn how different waters pair with food, why some taste silky or slightly sweet while others are bracing and saline, and why the simple question of “still or sparkling?” barely scratches the surface of what water can be. By the end, you’ll never think about a glass of water the same way again.

Cameron has worked at The Inn for nearly 20 years. He discovered the world of fine waters while studying tea and became fascinated by the Fine Water Society, water sommeliers, and water menus in fine dining. Inspired by the idea of pairing water like wine to enhance a tasting menu, he trained through the Fine Water Academy and became a Certified Water Sommelier. He is passionate about introducing this emerging concept to a wider audience and expanding the role of water in fine dining.
