Step out of the dining room and into the fields with Farmer Andy Thewlis, the passionate steward behind the Inn’s lush, organic gardens. On this immersive farm experience, guests follow Andy through rows of vibrant vegetables, fragrant herbs, and heirloom varieties, discovering the secrets that make the Inn’s produce truly exceptional. Known for his playful charm and “dirty little secrets,” Andy reveals the hands-on techniques that bring out peak flavor—from careful soil preparation and composting to companion planting, crop rotation, and mindful watering practices. Along the way, he explains why soil health is the foundation of sustainable, nutrient-rich crops, and how organic principles nurture biodiversity, pollinators, and resilient plants without synthetic inputs. Guests witness the rhythms of planting, tending, and harvesting, and learn why seasonality, sun, and touch matter as much as water and fertilizer. By the end of the tour, you’ll not only understand where your food comes from—you’ll feel the connection to the land, the care in every leaf, and the playful expertise that transforms humble seeds into the extraordinary flavors of The Inn’s cuisine.

Having been swept off his feet & spirited away to Little Washington, Farmer Andy Thewlis found himself spellbound by Chef Patrick O'Connell's enchanting realm. Answering the call to adventure, Andy pledged to serve as Chef's Fairy God-Father of Farming. As a bona fide Sorcerer of Soil, Farmer Andy's specialty in farming can only be described as the Avante-Garde of Agriculture. Beyond organic, our Maestro of Micro Greens is taking Chef's farm to new frontiers.
