Sustainability at The Inn

What began as a practical necessity evolved into a philosophy of care for the land, the community, and every guest experience we create.

When Patrick O’Connell opened The Inn at Little Washington in 1978, he did so in a tiny rural Virginia village so far removed from traditional culinary supply routes that most food purveyors simply would not deliver there. What might have seemed like a limitation quickly became one of The Inn’s defining strengths. Out of necessity, Patrick turned to the farmers, growers, and artisanal producers around him for the raw ingredients needed to bring his vision to life.

What he discovered was transformative. Ingredients grown nearby, using time-honored and sustainable techniques passed down through generations of Virginia farmers, possessed a depth of flavor that mass-produced commodities simply could not match. They were fresher, more expressive, and more deeply connected to the land that shaped them. Their provenance mattered—not as a romantic abstraction, but as an essential part of their character. To understand where something came from, who grew it, how it was raised, and what care brought it to the table was to understand its true value. Long before “farm-to-table” became a movement, The Inn was learning that the most exquisite dining experiences begin with respect: respect for the soil, for the land, for the people who cultivate them, and for the ingredients themselves.

That early dependence on nearby growers and producers gradually shaped more than our menus; it shaped our understanding of what extraordinary food could be. The Inn’s relationship with local farmers and producers was never simply about convenience or proximity; it was about recognizing that extraordinary food is inseparable from the care, patience, and stewardship behind it.

As our understanding of humanity’s impact on the planet has grown, so too has our commitment to stewardship. We have come to see sustainability not simply as the responsible choice, but as an essential part of hospitality itself. To care for our guests, we must also care for the place that welcomes them, the people who make their experience possible, and the resources entrusted to us.

At The Inn, sustainability is not a separate initiative. It is part of our identity. It is found in the choices we make every day: to use less, waste less, source thoughtfully, preserve what is precious, and create beauty without excess. We believe true luxury is intentional. It is generous without being careless, abundant without being wasteful, and exquisite because it is rooted in purpose.

That same intention guides the way we think about the food we serve. When we serve meat, we seek to serve better meat: raised with greater care, sourced with greater transparency, and chosen from producers who share our belief that animal welfare, land stewardship, and flavor are deeply connected. More sustainable meats, thoughtfully portioned and respectfully prepared, allow us to honor both the animal and the appetite for exceptional dining without excess.

Alongside this commitment to better and more sustainable meats, we continue to place greater emphasis on the beauty and abundance of plant-rich dining. Our own farming efforts give us the rare privilege of working with ingredients at their most alive: tender greens, fragrant herbs, sun-warmed fruits, delicate flowers, grains, roots, and vegetables harvested in rhythm with the season. These dishes allow us to offer a form of luxury that is both generous and thoughtful, celebrating the land more directly while inviting our guests to experience plants not as an alternative, but as a source of wonder in their own right.

In 2021, these efforts were recognized by Michelin when The Inn was awarded a Green Star, an honor that validated not only our environmental practices, but the deeper philosophy that has guided us from the beginning. For us, the recognition was especially meaningful because it affirmed something we have long believed: that sustainability is not separate from excellence. It is one of the ways excellence reveals itself—through care, restraint, imagination, and respect for the provenance of every ingredient and the future of the land that sustains us.

For nearly five decades, The Inn has shown that luxury and responsibility can strengthen one another. To us, stewardship means creating extraordinary experiences with greater care, deeper purpose, and less waste. It means honoring provenance, elevating plants, choosing better and more sustainable meats when we serve them, and allowing every ingredient to tell the story of the land, the hands, and the values that brought it to the table.
